Pelau


pelau

Pelau is the traditional Trini dish around Carnival time. One huge pot serves for 3 days - refrigerate, warm up, eat. As far as we can make out, our pelau is a direct descendant of the Arabic pilau recipe and cousin to pilaf and possibly even Chinese joong. Best with a green salad and pepper sauce.
The pelau in the image is Yolande's and the recipe is from Penny -
yuh could stew chicken? Yuh ha to season and stew de chicken/ beef then when it cook, pelt in de rice, pigeon peas, tomato, green seasoning like thyme and celery, pimento, red butter, pumpkin and ochro (optional) carrots, onion, salt, black pepper an coconut milk (optional) and let it cook on a slow heat till de rice cook. Make sure yuh put enough water to cook the rice but not too much to make it soggy.When it eh looking to wetty it good The coconut milk does make it taste good but the food does spoil faster. I eh know bout pork pelau ah never cook dat.
